What’s the difference between a smoker box and just wrapping chips in foil?

A foil packet with a few fork holes can work in a pinch, but a metal smoker box is more durable, contains embers more securely, and has an engineered vent pattern designed to keep chips smoldering rather than flaring up. Foil packets are also a one-time-use improvisation, while a smoker box is reusable and generally gives more consistent results over repeated cooks.

Does a smoker box work on a charcoal grill, or only gas?

A stainless box placed on a Flavorizer bar may need relatively high burner heat just to bring chips into the smoldering range — once you turn the burner down for a low-and-slow cook, the box may not get enough sustained heat to keep smoldering. If this happens, try running one burner on high directly under the box while cooking food indirectly over an unlit burner, or switch to a V-shaped box that sits closer to the direct flame.

Do pellet grills or dedicated smokers need a smoker box?

No. Pellet grills and dedicated smokers already burn wood pellets, chips or chunks directly to generate their own smoke as part of normal operation, so a smoker box is redundant on those appliances. Smoker boxes exist specifically to add wood smoke to grills — gas or charcoal — that don’t otherwise produce it.

Is a smoker box dishwasher-safe?
